Yes, I realize it has been months since I last posted a blog, but it’s was a case of “I work full-time, moved 2 weeks before Christmas and didn’t feel like it”. Plus I basically now have Dateline on demand….so apologies for that. But what better time to get back into blogging than preparing for the “most wonderful time of the year”?!
Wait — Christmas has passed, what time can I be referring to? What month is this? Don’t worry, I will tell you so stop scratching your head or people around you will think you have lice,…or a dry scalp.
Answer: The Super Bowl!!
I know what you’re thinking, Ola, you are insane to think Super Bowl is the best time of year. Yes, true. I am not a football fan. I was initially being a bit sarcastic, but then I realized, there are a couple of good parts: 1) a bunch of tasty snacks and apps the whole day and 2) the next day, football is over and I don’t have to hear or see it anymore by my sports fanatic husband and I can get back to complaining about the morons on House Hunters or whatever shows we can now watch together.
If you’re a football fan, don’t expect any apologies because it’s just on too many times in a week. I don’t care about the Carrie Underwood song. So how about we call it a truce and you make this simple Super Bowl Sunday recipe of mini pizza tacos instead (or make your woman do it – ha).
It seems like a simple ass app, but we annihilated this dish and we weren’t even really that drunk either. Don’t mind the lobster claw colour of my hand. It was poor lighting from the range. Plus, it was in and out of the oven and I don’t need this kind of hand judgement in my life, geez.
So while I continue digging myself out of the endless hole of shit and boxes from moving, sit back and enjoy how simple this recipe is. I’m sure mini pizza tacos will win the MVP of your Super Bowl Sunday snacking spread. Also, if you need another idea, peep this pizza dip.
Mini Pizza Tacos
1 package of tortillas
1 can of pizza sauce
¼ cup cheese
Several slices of pepperoni/cold cuts
2 tbs melted butter
Muffin baking tray
Preheat your oven to 400*F (or 200*C for my metric crowd). Cut the tortilla into small rounds using a cookie cutter or even the mouth of a cup/lid/jar. They should be around the size of your palm (unless you have freakishly giant/teeny tiny palms).
Shred the cheese your heart desires most (mozzarella is best, but whatever, I’m not going to tell you what to do). Just be careful not to grate your fingers….I’ve had a few close calls. Chop the meat into smaller pieces. Melt the butter.
Flip your muffin tray (not top, lol) and brush some of the butter on the bottom, between those muffin grooves. Brush some on the tortilla round and butter side down, roll in half to be a mini taco. Stick it between the muffin grooves. Do that with as many that can fit. For a 12 muffin tray, you should be able to fit 17 tacos.
Put the tray in the oven for 6-7 minutes until they’re not floppy and just starting to brown. You don’t want them to be too crisp because they’re going back into the oven and no one wants a crusty taco. No one.
Take out the tortilla rounds which should now be mini tacos and spoon in some sauce. Put how much you want just don’t make them too soggy. Put them in an oiled baking dish and stand them upright. Repeat with the cheese and meat. Any extra cheese, you can sprinkle on top. Put these babies back in the oven for another 5-6 minutes or so when the sauce has warmed through and the cheese has melted. If you’re adventurous, turn on the broiler for about a minute to really crisp them up.
Once out of the oven, stuff your gob. A simple, quick and tasty appetizer for the Super Bowl or any time that a casual snack would suffice. Shout out to my husband who sent me the mini pizza taco idea via twitter.
