If you haven’t had pickled red onions before, you haven’t lived. Seriously. They’re that good. And if you don’t agree, just go ahead and lose my number. These are the perfect addition to any salad, sandwich, taco, garnish, whatevs. Basically the perfect condiment.
Pickled red onions are so simple to make that you basically have to have no arms and/or eyes to not be able to make this. And if that’s the case, you have higher priorities than pickling red onions.
I’m sure some of you are like, “Hey Ola, I’m just not into onions”, like my brother-in-law. First of all, he doesn’t even know what he’s talking about because he doesn’t even like green peppers, shrimp or any kind of mayo/creamy sauce (good thing he likes women). Second, do you not like flavour? Zest? Or maybe stepping outside of your close-minded vegetable existence for one damn minute because yolo?!
Just try it once. It takes like a minute to make, costs like a dollar and if you don’t like it, pawn it off onto a parent as a homemade gift. Or maybe a brother-in-law 🙂
Pickled Red Onions
1 red onion
1 cup vinegar
2-3 garlic cloves
1 Tbs salt
Pinch of sugar
Slice the red onion into sizes you’d like to eat in the near future and put into a glass jar. Add in halved garlic.
Boil the vinegar, peppercorns, salt and sugar in a small pot over med-high heat. Pour into the glass jar. Let it cool before putting in the fridge and leave overnight. Ta da – – pickled red onions!
They will be ready in the am – nice and crisp….just like yo momma! Kidding, I don’t even know what that means, but these onions are wonderful…more so like yo momma 🙂
