I think I’ve mentioned that I’m not much of an early riser so I like to prepare my snacks to work the night before. Better yet, I like to make my snacks for a few days at once.
These healthy mason jars snacks are easy to make ahead of time and feed that 3 pm itch between home time and wandering into the office kitchen to eat that last pop tart in the community cabinet. I’ve felt that desperation before, but I plead the fifth and won’t tell you how it ended.
So prep these on Sunday night before you start off your week, right after you make your refrigerator oatmeal.
Healthy Mason Jar Snacks
3-4 cups crunchy vegetables cut into length-wise strips (carrots, cucumbers, celery sticks)
1/2 cup dip (guacamole, peanut butter, hummus, homemade dip)
4-6 small mason jars
Take a couple tablespoons of whatever dip you’d like and spoon it into the bottom. Cut some veggies lengthwise and place them standing up in the dip. Put the lid on top and pop into the fridge. These will stay fresh for the week and a great snack to grab in the morning.
I like to have peanut butter with celery sticks or carrots/cucumbers with hummus or even guac. These healthy mason jar snacks are a great option for the ketogenic diet, which I tried and can read about my experience here.
One thing to keep in mind, don’t jam the veggie sticks in too tight. I did that and then I had a hard time scooping out the dip. I guess you could have a second jar of just the veggie sticks for backup once the main ones are done OR you can jam them in and just eat some bald veggie sticks and only dip once it’s less crowded.
If veggie stick dip distribution is your biggest problem of the day, you’re doing pretty well.
